The lead Research Scientist of the team Yazheng Liu and his assistant Prof. David Kitts, observed that the antioxidants of the dark roasted coffee extracts are the result of roasting green beans in high temperature turning them brown. They analyzed the mixture of chemical compounds that are produced during the process. This is known as the Maillard reaction. The Mailliard reaction is responsible for producing the antioxidants.

The team of Professor Peter Martin also found that CGAs in coffee can effect in potential health benefits on us that ranges from positive effects on cardiovascular diseases, chronic degenerative diseases, and cancer. Coffee contains the maximum amount of polyphenols in comparison to green teas, herbal tea, and cocoa as per another research carried out in Switzerland, recognized as Comparison of the Antioxidant Activity of Commonly Consumed Polyphonic Beverages (Coffee, Cocoa, and Tea) Prepared per Cup Serving, and documented in The Journal of Agriculture and Food Chemistry in 2001. The research further added a cup of coffee has up to four times more polyphenols than a cup of green tea. A dishtowel can be turned to an apron provided that it is large enough. For a dishtowel to become an apron, it must be 18×28 inches.
