So, what should one consider when selecting a Thai cooking school?

Let me start by saying when I did my first Thailand cooking school research I found none of the cooking school websites complete in their information. To know their whole story, like how much or what dishes, I had to phone each school. Nearly every call was answered in their limited second language English which left me unsure of their understanding my question or if their answers actually answered my question as the answers were often obscure or incomplete.

Information like price should be on the website if its not why is it a secret? I can tell you why, it’s because some customer referers won’t send students to the schools whose website shows prices as they are uneasy about scalping posted school fees. And why are the dishes taught a secret?

1. Does the school website answer all your questions or does it leave you with unanswered questions … There’s a reason for nondisclosure … and I’m positive it’s not that they don’t know what they charge or what they teach …

2. Location: is important even if you are not coming through Bangkok you can still apply this check list to your Thai cooking school selection research. There are reputable cooking schools in every major center. Some schools have small storefront schools to leave you with the impression of small classes but these store fronts are used as student pick-up centers from where you will be delivered to a large class comprised of many store front pick-ups.

3. Teacher experience: A true answer to this question may be impossible to obtain. But again I ask why is it not post it to their website? Where did the teacher train or they simply able to cook and speak basc English?

4. Teacher qualification: As in question 2 a true answer to this question would likely be an exception. Most of the teachers will not have degrees or certificates of culinary study nor will they have a Thai Dept. of Skills level 1 or higher diploma.

5. Teacher Style: Ask if they teach “the craft”, the technique to Thai cuisine as many schools instruct their teacher not to take the time to impart this to you as it is time consuming.

6. The School: Remember … Thailands temperatures will be between 30 and 40 degrees celcius and if you are in some alley school in the open air and you fire up the gas burners you can bet you’re gonna sweat! A climate controlled school costs more to operate and as a result will cost more for a class but provides for clean cool air during your class. One outdoor school was simply a private residence porch bar-be-que used as a school! Do you really want to sit on the floor, Thai style, to prepare your ingredients? Why not use a table and chair? Do they overbook? If so, will you actually cook or be like in the audience and watch while others cook?

7. Price: Costs are important and no one likes to be taken!. My research found rates as high as 1,000 baht per dish with the lowest being 800 per set of 5 dishes in an outdoor setting with the average price being near 300 baht per dish and air con schools averaging 400 per dish or 2,400 baht for 6 dishes.

8. Notoriety: Some schools are all about their dog and pony shows, dressed in Thai formal wear they dance and sing and rhyme to you. One such world famous school appears to believe you will not be back for more classes as they teach only one set of Thai dishes. It’s one thing to know how to cook but it’s another to be able to teach!

One School that passed this check list with flying colors (8/8) is Ma-Sa-Man Cooking School & Bakery a CSI Cooking Schools Intl. school.

1. CSI, offers a different 5 star restaurant quality Thai 5 dish menu set every day and not only lists days dishes but makes their recipes available as a free download from their site.

2. If you are going through Bangkok you owe it to yourself to check out the Ma-Sa-Man CSI school which is only 15 minute walk north of BKK’s Khao San Rd and can also be easily accessed by river boat.

3. CSI doesn’t leave you guessing it’s clearly posted to their website in the form of a short video as are a sampling of CSIs many hundreds of testimonials on Kruzon Ltds Flicker account (hundreds and hundreds of them).

4. The CSI website proudly posts their owner and head chef & teachers’ qualifications in a short video. Thanaporn (Lee) Boonloh B.B.A. has most recently achieved University graduation and thus her graduation is not part of the website video at the time of this writing.

5. Chef Lee has a magnetic Thai personality and lathers you in her Thai charms and truly treats you with the care that reflects her desire to have you return where many schools look at you as a one-time mark (teaching only one dish group which is the same every day offering you no reason to return).

Getting into organic farming might seem to be quite a tough task, but it is not so if you start gradually and develop your knowledge and experience step by step. Decorating Ideas For Cupcakes With Team Logos As A Super Bowl Dessert

Everyone makes cupcakes. They are so simple to make, and make a great presentation. They can be made in any flavor, decorated or not, and are always a sought after treat. If one has a little artistic ability they can be made elaborately, though this is not a requirement for the enjoyment they bring.

I decided to try out some thoughts and designs, and will pass on my results here. Making cupcakes is as simple as having muffin tins and paper liners. Even the paper liners are not mandatory, though they help make it cleaner to pick up and move. Making a cake mix, either from scratch or from a box and filling muffin papers about half way and baking for slightly less time than a full cake layer is all easy as 1, 2, 3.

Once made, if decorating muffins is a frightening prospect, let that go and just enjoy. A simple smear of icing will make a delightfully edible treat. Actual decorating is really just, well, the icing on the cake. The main idea is to enjoy the process and have treats for guests and family. This year, the team colors are purple, black and metallic gold for the Ravens and red, metallic gold and white for the 49ers. These colors, or some combination, can be used as the main icing color or in combinations. The other color would be green to mimic turf.

Party decorating shops or cake decorating shops will likely have little decorations to use, such as little footballs or goal posts and such. If you choose to take the time to make your own, you might look for a small candy mold in football shapes. Melting chocolate or chocolate bark and filling the molds is quick and easy. Once the halves are chilled and hard, a dab of melted chocolate will glue the halves together. Allow to set and then make the laces down the side with white icing and a small holed icing tip.

Decorate some cupcakes with brightly green tinted icing and either just smear it on or use an icing tip number 233 to mimic grass. Even a small star tip can be used to create a grass effect. Set a little chocolate football onto the grass and there you have it. If you already have small Easter egg molds, these can be used the same way, by just planting the rounded end down onto the green icing grass surface.

I chose to attempt a loose facsimile of the actual logo for the teams. Making a brilliant red frosting for the background field of the 49ers look, I used a flat icing tip number 45 to make a rectangle in an approximate gold color over top. I piped in 49ERS in red using a number 4 round holed tip, then outlined the letters and numbers in white using a number 3 round holed tip. For the Ravens, I frosted the cupcake in deep purple. Using a toothpick, I traced an approximation of the raven logo, and then used black icing and a number 3 round holed tip to copy over that traced outline. I used white icing and a number 3 round holed tip to trace around the black icing to make the figure more noticeable. All in all, they are attractive and colorful.

Whether you take the time needed for making team logos or not, the goal is to have a sweet treat for all to enjoy. If you do not have the skills to use all the icing tips mentioned, simply spread on a couple of the team colors, half and half on top of a cupcake. Or ice the cupcakes in any color you prefer and pipe on RAVENS or 49ERS on each. The ways to decorate are only limited by your imagination. I hope these ideas will spark an idea for you.

If I were to recommend my favorite Turkish dish I would suggest starting with ezogelin soup followed by a coban salata and Iskender Kebap. End your meal with a turkish coffee and baklava.

Here is the breakdown:

ezogelin soup (ezogelin corbasi): This soup consists of red lentils, rice, bulgur, olive oil, butter, onion, garlic, tomato, pepper paste (or tomato paste) salt, pepper, paprika and mint. It is served with lemon wedges. Smooth, healthy, delicious and commonly eaten as a cure for a hangover. Many a partygoer in Istanbul can be seen eating a bowl of this soup in a kebapci (kebab restaurant) after their night has ended. It is also a must to preface the eating of a kebap. coban salata (shepherds salad)- a perfect combination of fresh tomatoes, cucumbers, parsley, onion, flat-leaf parsley, olive oil, fresh lemon juice, salt and pepper. It is light, easy to make and is a perfect opportunity to try the insanely delicious tomatoes in a fresh way.

Iskender kebap – This dish consist of thinly slice lamb from a doner (vertically-skewered meat that turns against hot coals to cook. The layers are sliced as they cook) The meat is usually served on pide bread cut into strips or rice. The sauce is a velvety tomato/butter sauce that is poured on top and served with yogurt on top (or on the side). You will find that most entrees have yogurt in the ingredients or yogurt on the side It is a staple in the Turkish diet. The pide gets all soppy with the sauce and it is irresistible to not eat every last bite. (yemek tarifleri )

With the main course, I would suggest you try a Turkish wine. Turks are not associated with fine wines, but I am sure when you try one, you will be pleasantly surprised at the quality. Turks have been making great advances in their wine-making techniques and grape varieties. With this meal, I would suggest an Okuzgozu wine (literally “oxs eye” due to the large blueish purple grape variety).
